Founded in 1898 in Schiavon, Veneto, POLI is a world-renowned artisanal distillery spanning four generations of mastery in Grappa making. Guided by the philosophy that exceptional Grappa relies on ultra-fresh grape pomace and time-honored heritage, POLI distills its grapes within 48 hours of harvest to capture their purest floral and fruity aromas.

Distinctively, the distillery operates three dedicated distillation systems: the historic all-copper "12 Knights" discontinuous stills, the gentle bain-marie (Athanor) system, and the cutting-edge vacuum bain-marie (Crysopea).
